Diwali Special- 3 Ingredients Besan Barfi.
One of the most loved Indian desserts after Gulab Jamun is either Besan Ladoo or Besan Barfi. It’s simple and very easy to make. Hope you enjoy the recipe
2 cups (180g) gram flour/besan
1½ cups (150g) sugar
1/3 cup (80ml) clarified butter/ghee
1/3 cup (80ml) water
½ tsp cardamom powder (optional)
2 tbs chopped almonds for garnish (optional)
Steps In Making Besan Barfi
Place a pan over medium flame and add ghee in it
Now add the gram flour and while stirring it continuously roast for 5-6 minutes.
It will start to form granules, keep stirring for another 8-10 minutes or until the ghee is released. Besan will also change it’s colour to light brown.
Once ghee is released mixture will have a paste type consistency.. Switch off the flame and keep stirring for couple of more minutes to avoid it from burning, as the pan is still very hot.
For sugar syrup, place a pot over medium flame and add water and sugar in it and bring it to a boil.
Now add cardamom powder and yellow colour and keep stirring till it forms a one string consistency. It will take 2-3 minutes.
To check the one string consistency, take a drop of the sugar syrup between your finger and press it together, the syrup will feel sticky and will form a single thread.
Now add the sugar syrup in the besan barfi mixture and keep stirring it till everything is well combined and cook for another 2 minutes.
In a tray greased with ghee, pour the besan barfi mixture and smoothen the top. Garnish with some chopped almonds and let it rest for 30 minutes to an hour or until it firms up.
Now with a sharp knife give square or rectangle cuts and serve.
Store it in the refrigerator in an airtight container for upto a month.
