Anda Ghotala. One of the most famous street food of Surat and Mumbai. It can easily be made at home in just 15 minutes with very simple ingredients. Tastes delicious!! Love it especially with buttered pav.. ❤️
2 tablespoons oil
2 tablespoons butter
3 medium onions finely chopped
1 teaspoon ginger garlic paste
2 medium tomatoes finely chopped
1 green chilli finely chopped
salt to taste
4 eggs boiled and grated
2 teaspoon pav bhaji masala
1 teaspoon red chilli powder
½ teaspoon garam masala
¼ teaspoon black pepper powder
2 raw eggs
1 tablespoon butter
2 tablespoons fresh coriander
Steps In Making
1)Heat oil and butter in a pan and add onions. Sauté them for 3-4 minutes or until they turn light golden and translucent.
2)Add ginger-garlic paste and cook for another minute.
3)Now add green chillies, tomatoes, salt and mix well. Cover it with a lid and cook for 7-8 minutes or until they turns soft and mushy.
4)Further add all the spices, red chilli powder, garam masala powder, black pepper powder and mix well. Add around ¼ cup of water and let it simmer for couple of minutes on medium flame.
5)Now add grated boiled eggs and mix well.
6)Further add 2 raw eggs and cook them on low- medium flame for 2-3 minutes. Do not over cook as Anda ghotla needs to have a soft texture.
7)Lastly add some butter and generous amount of fresh coriander and mix well.
8)Immediately serve with hot buttered pav.
